Carving pumpkins is always good fun, but I’d argue that eating them is waaaaay better. Let’s all remember that pumpkins are actual fruits that provide our bodies with myriad benefits when we digest them! According to the USDA, pumpkin provides a range of essential vitamins and minerals, including:
- vitamin A, B-6, C, and E
- riboflavin
- potassium
- copper
- manganese
- thiamin
- folate
- pantothenic acid
- niacin
- iron
- magnesium
- phosphorus
Now you’re probably quite familiar with pumpkin pie and pumpkin spice lattes, but there are tons of other ways you can use pumpkin! It is just another squash after all. Use it how you would use any other hard squash (like butternut or acorn).
I’ve had a few people ask me if the jack-o-lantern size pumpkins are edible or if the small “pie pumpkins” are the only edible ones. You can eat all the pumpkin varieties! The only downside is that sometimes the “decorative” pumpkins don’t have as intense flavor as the pie ones, but they are still certainly edible. I use the larger carving pumpkins when I cook because I like making a lot at once. I’ve never noticed anything “wrong” or “bad” in the flavor. Tastes just like pumpkin!

Pumpkin butter is one of my fall staples! I love slathering it on a piece of toast, it’s also used in the pumpkin cinnamon roll recipe below.

I could eat pasta every night, and this is one of my new favorite ways to eat it. I love the creaminess that the pumpkin gives the sauce.
Air Fryer Pumpkin Seeds

This is one of the easiest recipes in the list. I love making these for a quick snack throughout the week. It’s fun getting creative with the seasonings you put on these. You can go for a sweet mix with cinnamon, nutmeg, and a pinch of salt. Or you can go savory with garlic powder and a little salt and pepper. My favorite though is a heaping sprinkle of nutritional yeast, garlic powder, and salt to taste.
Roasted Garlic and Rosemary Pumpkin Hummus

A great twist on a classic favorite. I love that hummus is soooo versatile. This is a great fall treat!
Pumpkin spice latte
